Thai Vegetable Marinade

Ingredients

1/3 cup Vinegar
1/3 cup Water
2 tsp Soy Sauce
2 cloves Garlic - Minced Finely
1 tbsp Fresh Ginger - Minced Finely
2 tbsp Frozen Orange Juice
1/4 tsp Tabasco (optional)

Directions

Mix together everything above into a large bowl. (This marinade can last in the refrigerator for about 1 week.)

If you want, this marinade works best with the following vegetables.

1 Cup - Yellow squash - Sliced
1 Whole - Small Red pepper - Slivered
1 Whole - Carrot - thinly sliced
2 Cup - Cauliflower Florets


In a saucepan, take the sliced vegetables and let them simmer with the marinade for about 4 minutes.
After the 4 minutes, they can be immediately served, but will have a better flavor if allowed to sit for about 1 hour.
