Summer Vegetable Marinade

Ingredients

1 cup Olive Oil
1/3 cup Good Quality Wine Vinegar
2 cloves Garlic, Minced
1/4 cup Sugar
1 Red Bell Pepper
1 Red Onion
12 Mushrooms
4 small Yellow Squash

Directions

Slice all vegetables very thinly. A food processor is ideal for this. Layer vegetables in glass jar with tight fitting lid or plastic container with leak-proof lid.

Make marinade by combining all ingredients in saucepan and cooking until sugar is dissolved.

Pour marinade over vegetables and seal jar/plastic container.

Every hour, shake the jar/container so that all vegetables are coated with marinade.

Do this for 8 hours. Serve cold.
