Boil eggplant cubes in water for 10 minutes, drain. Pat dry to keep off excess water. Place in a large bowl. pour in the vinegar, salt, pepper, garlic, oregano, rosemary or mint, and basil.
Mix well and let eggplant cubes stand in this marinade for at least 12 hours.
Add oilive oil just before serving.
