Start by cutting the eggplant into large cubes and then boiling the eggplant cubes in water for about 10 minutes. Drain well.
In a large bowl, add the vinegar, salt, pepper, sliced garlic, basil, and oregano. Mix these up well.
Add the eggplant to the marinade and let it marinate a minimum of 12 hours.
Before serving, add the olive oil and mix it well.
