Italian Vegetable Marinade

Ingredients

1 1/4 cup Water
2 tbsp Balsamic Vinegar
1/3 cup Cider Vinegar
2 tbsp Lemon Juice
2 tsp White Pepper (optional)
2 cloves Garlic, Minced
1/4 cup Chopped Parsley
2 1/2 cup Mixed Vegetables

Directions

Mix water, vinegar, lemon juice, seasonings, garlic and parsley together in large saucepan. Add vegetables, then bring to a boil. Cover and simmer for 10 to 15 minutes until desired doneness. Remove from heat and cool to room temperature. Cover and chill for at least 2-3 hours, then serve.
