Ingredients
| 1 1/4 | cup | Water |
| 2 | tbsp | Balsamic Vinegar |
| 1/3 | cup | Cider Vinegar |
| 2 | tbsp | Lemon Juice |
| 2 | tsp | White Pepper (optional) |
| 2 | cloves | Garlic, Minced |
| 1/4 | cup | Chopped Parsley |
| 2 1/2 | cup | Mixed Vegetables |
Directions
Mix water, vinegar, lemon juice, seasonings, garlic and parsley together in large saucepan. Add vegetables, then bring to a boil. Cover and simmer for 10 to 15 minutes until desired doneness. Remove from heat and cool to room temperature. Cover and chill for at least 2-3 hours, then serve.
