Day-before Marinade

Ingredients

1 3/4 lbs Flank Steak Or Lean Chicken Meat
2 tbsp Salad Oil
2 tbsp Vinegar Or Wine Vinegar
1 tsp Salt
1/4 tsp Basil
1/4 tsp Rosemary
1/2 tsp Black Pepper
1/2 Chopped Onion
1 clove Crushed Garlic

Directions

1. Combine oil, vinegar and seasonings in a glass or stainless container. Mix well.

2. Brush both sides of meat or chicken with marinade. Make sure all sides are well-coated.

3. Cover the marinating meat and marinate overnight in the refrigerator. If you are in a hurry, at least allow meat to marinate for 2 hours.

4. For Steak: Broil 3" from heat about 5 minutes. Turn, brush with remaining marinade and broil another 4 minutes.

5. For Chicken: Pan fry (time varies depending on kinds of parts).

6. To serve the steak: Slice in thin strips diagonally across grain. Put the pan juices over the meat.
