Barbecued Beef Roast Marinade
Ingredients
| 1/4 | Cup | Vinegar |
| 2 | tsp | Soy Sauce |
| 2 | cloves | Garlic, Crushed |
| 1/4 | Cup | Olive Oil |
| 1 | tsp | Rosemary Leaves, Crushed |
| 1/2 | tsp | Dry Mustard |
| 1/4 | Cup | Apple Juice |
Directions
Start with the garlic and oil in a saucepan. Heat and then add the rosemary, soy sauce, and mustard. Now, remove sauce from the heat and mix in the vinegar and apple juice.
For a 3-4 lbs chuck roast. Place roast in glass dish and pour the marinade above over the roast. Next, cover the dish tighly with plastic wrap and refrigerate for about 24 hours, making sure you turn the meat occasionally.
Remove the roast from the marinade. Stir in 2 tbsps of ketchup into the marinade and heat on grill. Now, brush the marinade on the meat.
Place your roast on the grill about 4" from the coals. Cook 1-1.25 hours or until tender. turn the roast frequently, and baste it every 5 or 6 minutes with the hot marinade.
Serve when done cooking.
